Pancakes made with applesauce is an easy and tasty dish that can be prepared in thirty minutes. It is similar to that of a traditional pancake with the extra flavour from applesauce. I remember the first time I had a pancake. It was when Navin came home from school one day with a recipe he got from his teacher to make a simple pancake. In a home where idli and dosa was the common breakfast, the pancake was kind of alien. My mom tried the recipe and it came out well. But that was the first and last she made it. When I had my own kitchen I started making it whenever I was in the mood for it. And these pancakes made with applesauce is by far my favourite.
Ingredients:
- 1 cup All purpose flour
- 1/2 teaspoon Cinnamon powder
- 1 and 1/2 tablespoon Sugar
- 1/2 teaspoon Salt
- 1 tablespoon Baking powder
- 1/2 cup unsweetened Applesauce
- 1/2 teaspoon Vanilla extract
- 2 tablespoon Unsalted butter, melted
- 3/4 cup Milk
- 1 Egg
Preparation:
Sift all the dry ingredients namely flour, cinnamon powder, sugar, salt and baking powder in a bowl. Set aside.
In another bowl take applesauce, vanilla extract, butter, milk and egg. Mix them with a whisk.
Add the dry ingredients to the wet ingredients and mix through slowly. Do not over mix it. It is ok for the batter to be a bit lumpy.
Heat a heavy-bottomed non-stick pan or griddle over medium heat. Using a ladle or a measuring cup, pour the pancake batter into the griddle and cook for two to three minutes. Flip when small bubbles are formed on the top. Cook for another minute and take it off the griddle. Repeat until the batter is done.
Serve fluffy pancakes with butter or caramalized apples(*refer notes).
Notes:
- To make caramelized apple, melt 2 tablespoon unsalted butter in a saucepan and add 1 and a 1/2 tablespoon brown sugar to it. Add one peeled and chopped apple to it. Cook on a medium-low heat, stirring occasionally till the apples turn soft and golden.
