Spicy Scrambled Eggs or Muttai Poriyal are nothing but scrambled eggs that are made with spices commonly used in Indian kitchen and without any cheese. When you are out of veggies or looking for a side dish that consumes less cooking time you can make these spicy scrambled eggs. This dish can uplift the whole meal even when served just with rasam and rice.
Ingredients:
- 1 tablespoon Oil
- 1/2 teaspoon Fennel seeds
- 1 Onion
- 1 Green Chilli
- 1 sprig Curry leaves
- 1/2 teaspoon Salt
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Chilli powder
- 1/4 teaspoon Garam Masala
- 1 teaspoon Pepper powder
- 4 Eggs, beaten
Preparation:
Heat oil in a skillet or kadai over medium heat. Add fennel seeds. Let it pop and add the onions, green chilli and curry leaves. Sauté till the onion turns translucent. Add in salt, turmeric powder, chilli powder, garam masala and pepper powder. Mix them through and fry.
Add in the beaten eggs. Give it about 20-30 seconds and fold them through gently in the onion and spice mixture. Do not stir.
Repeat the process until the eggs are done.
Serve hot as a starter or as a side with rice.
