Eggplant fry is made with large purple coloured eggplants. The eggplants are sliced and are marinated in spices and are shallow fried on a skillet or a griddle. This eggplant fry is easy enough to make. It can be paired with a one-pot meal or tempered rice.
Ingredients:
- 1 Eggplant
- 1 tsp Red chilli powder
- 1 tsp Kashmiri red chilli powder
- 1 tsp Coriander powder
- 1/2 tsp Garam masala
- 1/2 tsp Turmeric powder
- 1/2 tsp Salt
- 1 tablespoon Ginger garlic paste
- 1 tablespoon Lemon juice
- Oil as required for frying
Preparation:
Take all the ingredients except the eggplant in a bowl and mix. Wash the eggplant and discard the ends. Slice them in circles. Marinate the eggplant slices in the spice mix for 30 minutes.
Heat 1 tablespoon of oil in a pan over a medium flame. Toss in a few slices and fry them till brown spots appear on both sides. Repeat the process till all the slices are fried.
Serve eggplant fry as a starter or with tempered rice or any mild curries and rice.
