Plain and simple South Indian style mashed potatoes that are tempered without any masalas. My Iamai used to make this dish. It is easy to make and goes well with a spicy or tangy curry along with rice. There are a lot of ways in which mashed potatoes can be prepared. Will post more of these in the future.
Ingredients:
- 1 large or 2 medium-sized Potatoes
- 1 tablespoon Oil
- 1/2 teaspoon Mustard seeds
- 1/2 teaspoon Split and skinned black gram/Urad dal
- 1 Shallot or 5-6 Pearl onions
- 2 Green chillies
- 1/2 teaspoon Salt or as required
- 1 tablespoon shredded Coconut
- 2 tablespoons Coriander leaves, chopped
Preparation:
Wash the potatoes and slice then in chunks. Take them in a saucepan and fill it with water till they are immersed. Boil it over a medium to high flame. Take it off the heat immediately after the potatoes are cooked soft and let them cool down. Peel, discard the skin and mash the potatoes.
Heat oil in a skillet and add in mustard seeds and urad dal.
Once the urad dal turns brown add in the shallots, green chillies and salt. Fry until the shallots turn translucent.
Add the mashed potatoes and mix them through. Add in shredded coconut and coriander leaves and give it a quick stir.
Serve hot with sambhar or any tamarind based curry and rice.
