A sundal is nothing but a stir-fry that can be prepared with a variety of legumes. Basically, the boiled legumes are tossed in oil with few spices and coconut. Groundnut/Peanut Sundal is one such dish that can be prepared in minutes.
Ingredients:
- 1 cup Groundnuts, boiled and shelled
- 1/2 cup Onion, chopped
- 2 Green chillies
- 1/2 tsp Ginger, chopped
- 2 tbsp Coconut flakes
- 1/2 tsp Mustard seeds
- 1/2 tsp Urad dal
- 1 tbsp Coriander leaves
- 1/4 tsp Salt or as required
- 1 tbsp Oil
Preparation:
Keep the ingredients ready. Heat oil in a pan. Add mustard seeds and let it crackle. Add urad dal. Once it browns add onions, green chillies and ginger and salt(*refer notes). Sauté till the onions turn translucent and ginger releases a nice aroma. Toss in the groundnuts. Lastly, add coconut flakes and coriander leaves. Give it a quick stir and take it off the heat.
Serve hot as breakfast or an evening snack.
Notes:
- For boiling raw groundnuts, rinse it a few times and take them in a pressure cooker with water and salt, and cook for 4 whistles on a medium to high heat. Let the steam settle down, and drain the groundnuts in a colander. After it cools, shell them and save the nuts for further purposes.
- Be cautious while adding salt. It is needed only for sauteeing the onions, as you would have boiled the groundnuts/peanuts with salt.
