Coconut Coriander Chutney is a chutney that can be made quickly. It tastes amazing when paired with idli, dosa or vadais. Try to use fresh coconut and coriander as it adds to the taste of the chutney.
Ingredients:
- 1/2 cup coconut, shredded
- 1/4 cup Coriander leaves
- 1 Garlic clove
- 1 Green chilli
- 2 Red chillies
- 1/4 tsp Mustard
- 1/4 tsp Urad dal
- 1 sprig Curry leaves
- 1/4 tsp Salt
- 1/4 cup Water
Recipe:
Take coconut, coriander leaves garlic, green chilli and salt in a small blender.
Pulse it 2 or 3 times. Then add water and grind it to a smooth consistency. Transfer it to a bowl.
For tempering, heat oil over a low flame and add mustard seeds. After it sputters add urad dal. Let it brown. Next, add red chillies and curry leaves. Make sure not to burn anything.
Pour it over the chutney. Serve with idli or dosa.
Notes:
- Be cautious while adding water. Add little by little while grinding. You do not want a runny chutney.
