Cauliflower masala is a dish that pairs well with any rotis or parathas. I know there is a long list of ingredients for preparing this Cauliflower masala. But, its nothing fancy. All these ingredients are readily available in an Indian household or can be bought in a store. The steps in this recipe are easy to follow and the end result is a tasty curry.
Ingredients:
- 1 Cauliflower
- 2 Onions
- 6 cloves Garlic
- 1 inch Ginger
- 2 Tomatoes, pureed
- 1 tbsp Rice flour
- 1 tbsp Cornflour
- 1/2 tsp Cumin
- 1/2 tsp Fennel
- 2 inch Cinnamon
- 2 Cloves
- 2 tsp Chilli powder
- 2 tsp Kashmiri chilli powder
- 1 tsp Coriander powder
- 1 tsp Garam Masala
- 1/4 tsp Turmeric
- 1+1/2 Salt
- 2 sprig Curry leaves
- 4 Red Chillies
- 2 pinches of Asafoetida
- 4 tbsp Oil + more for frying
- 1 tbsp Ghee
- Coriander leaves, a few for garnish (optional)

Recipe:
Boil water in a pan. Add 1/2 tsp salt and 1/4 tsp turmeric. Drop the cauliflower florets in. Let it cook for 5-7 minutes. It should be just cooked so that it has a crunch. Make sure not to cook them mushy.Transfer it to a colander and run it through cold water a few times. Let the water drain completely.
Take rice flour and cornflour in a large vessel and toss in the florets. Make sure it coats all the florets. Heat oil a deep bottomed vessel and fry the cauliflower till it gets nice and golden in batches. Drain excess oil in a paper towel or tissue.
Peel and chop onions, ginger and garlic. Take them in a mixer jar and grind it to a smooth paste.
Heat oil in a Kadai, and add cumin, fennel, cinnamon and cloves. Let it splutter. Add the ground onion-ginger-garlic paste. Sauté it till the raw smell leaves and onion turn translucent. Add tomato puree. Mix them all together. Next, add the salt, chilli powder, coriander powder and garam masala. Stir.
Finally, add the fried cauliflower florets. Mix them through the gravy and cook for a few minutes.
In a small pan, heat ghee. Add curry leaves, red chillies and asafoetida. Fry them and pour it over the cauliflower masala.
Serve hot with chapati, poori or paratha.
