Drumstick is one of those vegetables thats available all across India. It plays well with other vegetables and pulses too. It can be used to make a variety of dishes. Drumsticks enhances the flavour of the dish its used to prepare. This Drumstick Curry however is a curry with just drumsticks as the main ingredient. It is a dish that requires minimum effort but is yum.
Ingredients:
- 2 Drumsticks
- 1 Onion
- 2 Tomatoes
- 2 Green Chillies
- 1 sprig Curry Leaves
- 1/4 cup grated Coconut
- 1/2 tsp Fennel seeds
- 1 tbsp Oil
- 1/2 tsp Mustard seeds
- 1/2 tsp Urad dal
- 1/4 tsp Turmeric powder
- 1 1/2 tsp Sambhar powder
- 1/2 tsp Salt or as required
- 1 cup + 2 tbsp Water
Recipe:
Wash and chop the drumsticks into 2 inch slices. Cut the onion and tomatoes length wise. Slice the green chillies into halves.
Take the chopped drumstick slices in a pressure cooker with salt, turmeric and 1/2 cup water. Cook it for about 3 whistles in medium to high flame.
Let the steam settle itself. Do not drain the excess water. Keep aside.
Take grated coconut and fennel seeds in a mixer jar and blend them in to a paste with 1 or 2 tbsp of water.
In a kadai, heat oil in a medium flame and add mustard seeds. After it sputters add urad dal. Let it brown a bit. Make sure not to burn them.
Next add the onion, green chillies and curry leaves. Sauté them till the onion becomes translucent.
Add the tomatoes and about 2 pinches of salt. Stir and let the tomatoes cook for a few minutes.
Switch the flame to low and add sambhar powder. Mix well.
Then add the drumsticks along with the excess water, if any from pressure cooking it.
Add the remaining 1/2 cup of water. Let it boil well.
Add the ground coconut and fennel paste.
Mix them all together and let it simmer for about 2-3 minutes. Switch off the flame.
Drumstick curry is ready to be served.
