Baby Potato Fry is a delicious dish thats quick and easy to make. It pairs well with dal, sambhar, ghee rice or any other variety rice. In this Baby Potato Fry dish the potatoes have a crispy outside and a soft centre.
Ingredients:
- 250 grams Baby potatoes
- 2 tsp Red chilli powder
- 2 tsp Coriander powder
- 1 tsp Fennel Powder
- 1/4 tsp Turmeric powder
- 1 tsp Salt or as needed
- 1/2 tsp Mustard seeds
- 1 sprig Curry leaves
- 4 tbsp oil
- Water
Recipe:
Wash and pressure cook the potatoes with a cup of water for 4 whistles on high flame.
Once the steam settles, transfer it to a colander to drain the water.
Peel and halve the potatoes.
Take all the spices in a small bowl.
In a pan heat oil and add mustard seeds.
Once it splutters, add curry leaves and reduce the flame to low.
Now add the spices.
Fry them in the oil for 10 – 20 seconds.
Next, add the potatoes and mix them well such that all the potatoes are coated well of the spices.
Cook till the potatoes turn golden brown.
Serve hot with dal, sambhar or any variety rice.
